Bikini Recipe

Yields 10 people

For the Clementine Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar

Ingredients for the Drink (makes 850ml, serving 10)

400ml decent vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (see above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing

Method

For the Citrus Syrup: Combine every ingredients in a pan, heat until it reaches a simmer, mixing so the sugar melts. Then, remove from the burner allowing it to reach room temperature fully. Pour into a sterilised bottle, cap it and store chilled, where it will keep for up to one month.

For the Batch Mix: Combine all the spirits and syrup in a large bottle, allow it to infuse for an hour, then pass it through preferably using a fine cloth, so it's completely strained.

When ready to serve: Add 85ml of the premix to a stirring glass packed with ice, and stir gently for a minute until cold. Strain to a cold coupe glass or similar, decorate with some cranberries and complete it by giving it a light spray with the mandarin essence over the top.
